In my opinion, you should first check out the references of each catering firm, then ask around for unsolicited info regarding them, ask florist, wedding consultants, bridal shoppes, party planners, rental companies, ect.....as for the pricing I personnaly believe it is the caterers job to provide enough food for your guaranteed number of guests, you should not have to choose how many or what size platters you need, of all the items we sell, we only sell jumbo shrimp by the piece, everything else is per person, so the responsibility is on us to provide the appropriate number of items & quantities......just my thoughts.....sam sears, cec
