catering banquet

We have a Christmas banquet coming up larger than we
have ever done...250-300. It is a traditional holiday
meal, turkey, ham, dressing, yams, etc. My question is
how much meat to allow per person since this is going
to be buffet style. Am I right in preparing 4 - 6oz
servings of veggies and dressing per person? Thanks
