I think that in cakes you may not really cook out the alcohol enuf. But an alternate suggestion is to make a strong instant expresso stock syrup and use it in place of the kaluha that is called for in the recipe. Use instant expresso, such as medala d'orio, just add a bit of hot water to disolve and then add stock syrup until you find a consistancy close to the kaluha. Good luck
