Just some thoughts. Weight distribution and or weight handling ability. Power 110 220, generator size, outside source, water holding, fresh, hot, grey, pump, demand plus access to outside source. Walls , floors, ceiling, sealed, ease of cleaning. Equipment, preferrably propane, electric combo. Watch electric draws. Amps. Proper extension cord size. minimum 100 ft. Propane refridgeration, and cooking is best for self containment. High capacity Ventilation. Check and approve all water , washing, cleaning facilities, in the planning stages with local Health Department, It's usually to late and costly with post approval from Health Department. IE. Water tank capacity, hot water capacity, Grey water holding. Triple sinks and hand washing sink. etc. Local Health Department, should give you specifics. : Im currently a Service Manager of an RV dealership. I often have thought of such a "conversion" and one concern that I would have with a converted 5th wheel, would be its ventalation. Is this going to be used to prepare foods or simply to transport and "hold" foods? Most of my prior catering experiences involved many stoves and convection ovens running...I would think that during the hot summer months, the heat would be unbearable! Also..I would be interested in the electrical conversion that has been done. And lastly, have you consulted your health dept, Insurance company, and the dmv for proper licenses? Let me know what happens!
