Im currently a Service Manager of an RV dealership. I often have thought of such a "conversion" and one concern that I would have with a converted 5th wheel, would be its ventalation. Is this going to be used to prepare foods or simply to transport and "hold" foods? Most of my prior catering experiences involved many stoves and convection ovens running...I would think that during the hot summer months, the heat would be unbearable! Also..I would be interested in the electrical conversion that has been done. And lastly, have you consulted your health dept, Insurance company, and the dmv for proper licenses? Let me know what happens!
