Hors d'oeuvres for 140

My family is catering my wedding reception for me. It is for 140 people, starting at 8:00 with only hors d'oeuvres and cocktails served, and we are having:
bread sticks
chicken fingers
swedish meatballs
mini quiche
mini pizza (on crackers I believe)
smoked fish
and then later on a dessert table
butter tarts
fruit trays
cheesecakes
carrot cakes
chocolate cake

Now my question is how much of each should we have? Do I have enough selection? I have no idea how much to tell people to make.
We have chafing dishes for the hot food. Any other suggestions for something 'vegetable' that can sit in a chafing dish all night and easy to make would be appreciated. We don't have any service staff to wait on people.
