Sorry to reply almost 6 months later but forgot about my reply.
First,the 12 waiters are only for the food service,another 12 waiters for licor service and another 2 waiters for wine service.
Second,30 minutes for 200 people is a very good time frame.
Third,i have used this service and the people loved it.(the best approval)
