What makes a catering company successful?

Hi! I am part of a three member team from Nanyang Technological University, Singapore, doing our final year project on the catering industry in Singapore.

We would like to find out and seek your opinions on:

1)What would be a good way to rate catering companies?
2)What kinds of standards are de facto?
3)Do expectations of people, who use different companies, differ with each company? Which matters more? The food quality, price, the company brand name, reliability or other factors?
and most importantly,
4)What do you think are the factors that will make or break a catering company.

I guess most of this questions are quite universal, thus any help would be REALLY appreciated!
