When we first started out, we couldn't afford all the cambros that we required. The health inspector told us it was okay to used
plywood boxes. We hired a carpenter to make them and each box held up to 6 insert pans full of food.( We also hade them made for the baking sheets to hold chicken, sliced beef etc for served meals) The trick to keeping the food hot was to fully line the inside of the box, bottom, top and all 4 sides with 1/2" styrofoam. We then covered the last of the pans with a good quality flannel sheeting or linen tablecloth to keep the heat in. This worked just as well and in some cases better than the cambros. They were easy to keep clean because you could hose down the inside and outside and change the styrofoam
as needed.
