You're showing your ignorance of money, $5 pp on the bill adds up, 100 covers would pay your wage in one nite.
A shot of booze is fine by me but most humans want food, alcohol has higher profit ratio but is lower in volume sales, otherwise why would restaurants serve food instead of booze.
When you hear someone say " they make their profit on the wine.booze etc" they don't know business or the reality of what happens, try doing the books sometime.
