To grill the vegs I'd make an herb de provence vinagrette.
Tarragon, shallots, garlic , olive oil, red wino vinegar and the herbs.
...or make your own with some lilac and lavender added.
Make a reduction with the tarragon,shallots, vinegar and herb de prov', let cool and make up the sauce from that
its got a great zing to it and you can bind it into a sponnable texture with some dijon.
