:I would take Wusthofs over Henckels any day. Henckels never hold a edge. You might want to look into Globals, which are very popular Japanese knifes. I know of some very high end Japanese knifes but they are very expensive (around $300.00 for french knifes). You can E-mail me if you want more info. As for Sharpeners, Use a tri-stone. Hand held sharpners tend to make you lose the shape of the blade.
