I thought Stinky's reply was a gag but after reading it I'd agree 100%, thats reality in too many examples.
You can count every chef on TV in that category.
Well Pepin is no longer in vogue so he's not on TV now but the rest of them are quite lousey.
To answer your question directly ...its training and natural ability.
Same as anything else.
I don't think there are any great American chefs, certainly not Grand Chefs. But like anyone in the food biz they all work hard as dogs and thats great enough for me.
