has this chef not an ounze of sense then?, some think if it sounds convoluted enough it must be clever enough to be trendy.
Try something along the line of a frozen tomato juice something or other and chop the fresh vegs into it just before serving.
I'd ask him how its "supposed" to be done?, pass the buck back.
Imagine getting served that mess because the chef thinks he can beat success.!
Professionals shouldn't read idiotic trendy mags.
