I appreciate your comments, but my original post mentioned that I have worked in restaurants for years. I have over ten years experience, six of them in a general managers position. My background includes running a scratch kitchen. I was merely asking about supplementing my background with some information on seafood preparation specifically, becuase none of my experience has included such a task. I have worked with shellfish, but have no experience handling a whole fish that needs deboning. I thought I would receive some helpful ways to learn a new technique.
By the way, unless you have at least 10,000 hours of verifiable experience, you may not even sit for the NOCTI exam. My experience has already been verified and approved.
