Obviously this conversation won't get us anywhere. Hopefully this
web site will still be here in about ten years from now so we can
try this again. Hopefully I'll still be alive, I'm interested in
hearing about your journey in this over-rated(sp) industry. What I
mean by that is that the media has made it look like being a chef
is the ultimate job and everyone should be one. In my case it is
the ultimate job for know, I still enjoy it very much, but it's
just a job, it's not as glamourous as they make it sound.
Good luck in your journey and I hope you find a place that you're
comfortable with, life is much too short to put up with all that
BS.

Who would've imagined at that time that they would be thickened with a roux? Do you remember a time when pastry cream was thickened with flour not cornstarch?
