I am getting married on October 10, 1998 and since we are on a very limited budget decided to cater our own reception. We did not want a sit down dinner anyway an decided to go with fruit, vegetable, cheese, cracker and meat trays as well as potato salad, cold slaw, pickles, rolls, punch, tea and coffee. The only problem is that I don't know how many trays to order or how much salad to make. Our list is at 250 but are only expecting around 150-170. I know the amount of people each type of tray will feed but because we are having such a variety it's hard to decide how many to order. Here are the amounts:
Vegetables 25-40
Fruit 20-30
Cheese 20-25
Crackers 20-25
Meat 20-25
The salads and rolls I'm not sure about I guess it depends on how much we need based on how much of the other stuff we order. I would greatly appreciate any help you could give me. I also don't know how much punch to make. We are having a cash bar so alot of people will be drinking alcohol as well.
