Thanks for the posting.
We can never be reminded enough as to the temps we should be
using. Sous chef just pulled the dressing for the roast turkey
out of the oven for tonights Sunday special, 165 degrees.
Many times chefs do play Russian Roullette with food. It only
takes one occassion to ruin someones health and anothers reputation.
May we all remind ourselves of the Temperature Danger Zone and
keep our hot food HOT and our cold food COLD.
Hopefully the other chefs do not respond to my posting too hastily
as I will not respond with a debate!
