Because I am not "in the profession," I put the "our" in quotes:
I enjoyed (well, LOVED!) your examples very much, particularly
about serving "...with ceremony." I may not be a chef, but I know
that feeding people is (or should be) a gift of love, and one
should--I hate that word under most circumstances, but use it
willingly when referencing "gifting" my friends with food
creations--try to make each tidbit of food appear to be so
appealing as to give everlasting joy or something exquisite in
one's memory that lasts longer than what one tastes.
I have never understood the concept of, say, mixing peas with
potatoes when each are served separately (and, obviously with
specific herbs or flavors meant to be appreciated in their own
right mingled with the specific vegetable) on one's plate--but,
and this is a sorry state IMHO, Americans do this kind of stuff
all the time! EWWW!!! And probably add catsup! double EWWW!
But this one quote tickled me no end, coming from you (quoting
F. Point) about the arguments (?) about using or not using a
"base" (which started such a fuss) which I found in a recent post
from you...
