I think that anyone who tries to put their finger on one person or thing as being "american cuisine" is doing us all a disservice. it is important to remembewr that this country was founded by rogues and outcasts from all
over the world. these people all came here because they were dissatisfied with the constraints and rules placed on them in their home countries. american cuisine is based on these same principles. break all of the rules.
use classical ingredients in non-clasical fashions. ignore the restraints that european traditions demand and create your own nich. don't be afraid to be a rogue-simply be true to the food. that is what i think it is really about.
