I am also trying to explore a career change, my interest is in pastry. I just today got off the phone with Sheila from Le Cordon Bleu, at the corporate office in New York. Sheila's suggestion was to attend the school in London, London offers a 23% disount to people 30 and over who are changing careers, it includes both culinary and pastry, so you would have to do both but there were many other positives about London, give her a call I'm sure if you have a will there will be a way.
