The current issue of Pastry Arts and Design magazine is a must read for anyone already in or thinking to get in the field.
Its a State of the Business issue, full of interviews and statistics culled from their nationwide poll.
If you want to know which area of the country is lacking in pastry chefs its in there (CA) and which area suffers a glut.
Which areas pay the most for pastry cooks , some guy named Gerard even gets a last lick in.
Demand for people who can produce good desserts is outstripping supply , now that can't be all bad can it?
