Anyone have any experience with this school or its graduates? It sounds impressive, but given what I've read on this wwwboard, in _Parachute_, in Pastry Art & Design, and from talking to people, I'm skeptical of schools in general, even one founded by M. LeNotre. It really seems like apprenticeship is the way to go.
At the least it sounds like I should get some real-world experience before going to an expen$ive school.
So, any pastry apprenticeships available?
