Just a quick follow up on all of this....

It's like Gerard has more or less stated. There are so many pastry oppotunity out there that you do not have to beg for the position you want...just be ambitious about your goals and you can more or less build your career on experience alone...just don't be tempted by greed and glory too early.

At the time when I was searching for my present job....I sent my resume to the properties in the cities I wanted to work. I got so many offers from many of those places and others because my resume got passed around I was blown away. I was offered all different types of positions...and the one I accepted was the least paying and lower on the totem pole. All because I want to learn as much as I can before being the top man unlike many graduates I see come out of school thinking they are the cat's meow because they have been fooled into thinking that and as soon as they get into a real kitchen they are crying for their mother.

Anyone thinking about a culinary career, whichever path they choose to take to achieve their goals, should take a year or so and work in the type of place they want to end up in. This would certainly weed out the naive before they get robbed blind by the school system!
