: I am a 29 yeear old college graduate looking for a career change by fulfilling a lifelong dream: to be a chef of my own place, catering, someone else's hotel, restaurant, catering etc. I have no experience working in food services but have a strong desire to be a chef. Should I start washing dishes in a local establishment or shoould I go right in to cooking school? Any answers will be appreciated. Thank you.
Anthony, the first thing to do is try to get a job as a prep cook, line cook, or dishwasher in a full service restaurant. The more you want to learn the more people will want to teach you. I also recommend taking a basic foods class at a local community college or technical school. This will give you a boost in your job as a prep/line cook or dishwasher. If you need help finding a job or school feel free to e-mail me for information about programs in your area.
