If you want some personal advice, go to Bellouet School in Paris, the teaching is the best and cheapest you can get there. Lenotre is mostly a name that has lost a lot of it's true value. Joel BELLOUET is a M.O.F., (best craftman of france), one of the best and he is a simple man, with a passion for pastry. When he teaches with his team, they share their recipes, the little tricks that make the difference, ideas and more. Same thing with his partner Jean-Michel Perruchon, and on their team they have one of the best teachers in pulled and blown sugar, Stephane GLACIER.

Good luck

funny you mention this,
but when i had my training stages at lenotre back in the 80`s ,bellouet was the teacher there along with
Paul Ray and Gilbert Pone, before the times of marcel derrien who ,unfortunatly is not very focused on his mission as the school manager (i think he drinks alot! ).lenotre from the 80`s was a great school .it was mainly because of bellouet`s teachings. when the time cake for Gilbert Pone to retire from his school manager position , there was a big fight about who will come next. even though bellouet was the most talanted person, it was given to derrien who was the older man and was given the position out of respect. so bellouet left , and opened his own school which is great!

being an MOF doesnt meen much in bellouets case, cause he is an MOF glacier (ice cream maker),not MOF patissier, how ever he is a superb crafts man. i have all his books and they are great.the only person i know , that was left at ecole lenotre from the old days is jean louis clement ,the teacher in the bread/pastry classes, who also got his MOF in 94`.he is very good, the new teachers i dont know much about...

any way , lenotre has an email,
ecole@lenotre.fr
ask for madam Plobner , a very nice old lady who runs the office.i think ahe is still there...
but i would prefer bellouet`s school .
