I have taught CA1 and CA2 for three years. There are no pre-written lesson plans for high school culianry arts that I or any of the three guys I teach with have found yet, and we have been looking.
As far as management goes, use your best judgement, there are no books that can teach you how. It takes practice and smarts. Pick your battles but don't back down once you draw the line or you'll get eaten alive.
I would be happy to exchange ideas but I'll have to think of some first.
