Corned Beef and Cabbage
New England Broiled Dinner
serve....4

4 lb. corned beef
1 lg. onion, cut in half


Most corned beef comes with a little package
of pickling spices. you may or may not use them.
I do not.
I remove the beef from the bag and rinse it off well.
Sometimes it will feel slimy, that is normal. Just wash it off.
Put beef into a large pot and cover with water, bring to the boil.
Boil for 30 minutes, drain and discard water. Put back into the pot
and add the spices [if you are using them] 1 large onion [or 2 medium
onions] if you do not use the spice pkg. add 1 teaspoon of crushed black
pepper and cover with fresh water. Cook this for about 1 1/2 hours,
on the simmer.
Now! while the beef is cooking prepare and set in water until
ready to use any /or all of the following vegetable Cabbage, carrots,
onions, turnips, potatoes, rutabaga, Brussels sprout, parsnips,
Now! after 1 1/2 hours of cooking you add all the vegetables you
are using. and continue to cook until vegetables are tender.
Now! that was the original recipe. Here is what I do.
I use only potatoes, carrots, cabbage, onions and sometimes turnips.
I also cook everything separately.
The Corned Beef shrinks badly so cook enough about 1 pound per person, before cooking.
You cut this meat across the grain their is no gravy with this dish.
I have been unsuccessful trying to make any. I make a beef gravy on
the side. and/or some of the cooking water.

Leftovers [ if any]
corned beef sandwich [ with mustard, I use mayonnaise]
Red Fennel Hash [ cut up leftover onions, [or new] potatoes, [or new]
corned beef and a can of beets cut up. everything in equal size.
the corned beef is shredded.

This is sometimes in Boston that green food coloring is add to the
pot, to make everything green. It is served with green beer as well.

Corned beef is beef soaked in a brine of salted water.
you need to taste the cooking water before adding salt.
