National egg alert after outbreak!
SANTIAGO (Reuters) - Chilean health authorities have declared a national egg alert because of an outbreak of salmonella food poisoning, urging that all eggs be well cooked until the outbreak is brought under control. Health Minister Alex Figueroa declared the alert late Thursday after 86 guests at two wedding parties earlier this week suffered salmonella poisoning that authorities sourced to fresh mayonnaise prepared from eggs.
Many Santiago hotels Friday stopped serving the traditional welcome coktails for tourists such as "pisco sour" and "vaina" that are often prepared using raw eggs. The hotels offered egg-free alternatives to visitors instead.
"After the health warning we threw out all the food made from eggs in our kitchens, such as mayonnaise, pastas and sauces," said Pamela Rubio, spokeswoman for the Hotel Fundador in downtown Santiago.
Pisco sour is a favorite national coktail prepared from pisco grape spirit, lemon juice and sugar. Eggs whites are often added. Vaina is a sherry-based coktail which is prepared with raw egg yolk and cinnamon.

: : I recently used a Ben & Jerry's ice cream recipe and made a batch of the best frozen custard ever. However, raw eggs make me nervous. Should I be?
: : I have also been toying around with the idea of opening a small frozen custard store. Would it be safe to serve custard that contains raw eggs. Would I be obliged to share with my customers that I use raw eggs in my recipe. Also why do some frozen custard recipes call for cooking the eggs and some do not. Advantages/Disadvantages?

: Not for some people, but then.... you wouldn't feed a baby honey either.
: Heres the scoop on eggs, chickens at poultry factories are fed ground up parts such as feet and heads which is mixed in the meal.
: Chickens can't process this type of food , not being carnivores.
: Instead of stopping the practice, congress ,greased by lobbyist money, decided to make the public change their cooking methods.
: It has always been safe to eat raw eggs, its safe to leave them unrefrigerated, I never chill eggs, I use at least 20 dozen eggs a week.
: The public has been conned and a shamefully high number of professionals who ought to be more knowledgeable about something so obvious.
: I make and sell choc mousse with raw eggs every day, sold literally hundreds of thousands. Never had a problem, never chilled an egg.
: More people were killed by coca cola machines falling on them last year than eggs, btw there are NO statistics available re egg.
: If you're concerned about sticking your neck out commercially just buy pasteurized frozen yolks ($6 per half gal) and ditto whites.
: I'd do it that anyway to save time.
: I don't know what frozen custard is, sounds like creme anglais based...which should be cooked.
: Not to rain on your parade but a pudding shop opened up last yr in Boston and promptly failed, you need to be a bit more diverse to spread the risk.
: Get proper training or you won't have a dogs chance.
: Gerard
