Secondary teaching certification tests

Hello,

I am taking a test through the national agency called NOCTI-- in Michigan the local name is MOCAC. I am curious if anyone is familiar with this test, The outline is very vague, and at 700.00 a test, I cannot afford to fail. The test includes a 200 question written and 5 1/2 hour practical exam. Anyone knowing ANYTHING about this test please help!!!
The name of the exam is Quantity food prep. I have been told all ingredients and materials will be provided, but no recipes. How does one prepare for such an experience? I have worked in several restaurants, but have no experience with a whole fish or even deboning one. I always have worked with fillets. This is just one example of my concern. Is it possible to study or bone up?
