Chef Renee,
to cook ground meat anything but well done would be like playing Russian Roulette, in my opinion. It's different with steaks, etc. since bacteria can't get that easily to the inside. When you grind meats you increase the surface area tremendeously, making bacterial action easy.
Check with your local health department and see what they have to say.
