I think you're right re' the turkey and not the egg.
"protecting all the people you serve" besides being a culinary tautology is a distortion of what Sharon said though, she said 'protect all the people all the time', not the ones you serve.
The FDA tried and failed to make everyone serve only hard cooked egg so now they grasp at any opportunity to scare the public and try cause a groundswell where Joe public always asks for his eggs scrambled.
The media being the willing dupes they are for anything sensational just report it.
Gotta go fry some choc mousse.!
