Aren't we all afraid? How much liability insurance do you pay?
Will someone choke? Will someone take an alergitic reaction to one of the spices, herbs, sauces, mixes, etc?
Where does it stop.
I am as paranoid as the rest of you (for good reason) I have a deathly allergy to MSG. I have landed in the ccritical care unit too many times to remember. But here it is folks. IT IS MY RESPOSIBILITY TO FIND OUT WHO COOKS WHERE. WHO USES WHAT. HOW SAFE IS THE PLACE I CHOOSE.
I AGREE WITH SHARON, YOU CAN'T PROTECT ALL OF THE PEOPLE ALL OF THE TIME. What kind of idiots would we be if our kitchens weren't properly run? It isn't just ourselves, but the staff under us that we must keep our eyes on.
This is our business and for sure we are all concerned about our clients. God forbid that someone, sometime gets ill eating my food. I would be out of business fast!!!
So, do what we know how to do. Use all the training we have.
By the way, I'm not having turkey for Thanksgiving, are you?

: Mark,
: I think you're right re' the turkey and not the egg.
: "protecting all the people you serve" besides being a culinary tautology is a distortion of what Sharon said though, she said 'protect all the people all the time', not the ones you serve.

: The FDA tried and failed to make everyone serve only hard cooked egg so now they grasp at any opportunity to scare the public and try cause a groundswell where Joe public always asks for his eggs scrambled.
: The media being the willing dupes they are for anything sensational just report it.
: Gotta go fry some choc mousse.!

: Cheers, Gerard.
