Tsk, you can't turn your back for a minute.
Write a memo to the F&B and GM, let them know your concern, they often are the last to find out.
Prefabbing is usually dictated by the bottom line and lack of personnel.
Many Hotels are going prefab, especially for dessert and in some cases it makes more sense.
