Gerard is right ,notify your F&B Director.
If there is a problem , it is their job to handle it.
Your job is to support your chef.Remember he gave you a chance in the first place. Perhaps he is overwhelmed w/ his own job, let alone trying to fill in for a good sous out on leave.

I did my apprenticeship in the "olden days", the only thing that was truly better then was the forced rote memorization of so many techniques & recipes. However, places that practice these methods now are falling by the wayside(alas) corporate reality says "grow up & check your ego at the door".

Do yourself a favor ,avoid politics & power struggles.
If your chef is qualified ,time will tell.
If not time will tell.
If he is replaced , I garauntee you the next one will be looking to eliminate those without loyalty.
