As a fellow pastry chef, I can not stand people who hide their recipes as if they were some big secret. I feel it is the obligation of everyone in our field to be more open and willing to exchange ideas....that is the only way for our field to progress and receive recognition that it so richly deserves. Now I am not saying to take out a full page add or to post them all on the net. But, don't be afraid to give them out to others upon request or leave them at a place where you have worked. That is how you will leave your mark upon that place and the people you worked with. Believe me, if you or your work made any sort of mark or inspired anyone than that should be thanks enough!
