Advice from experienced chocolatiers

I realize that this message is going to sound pretty stupid.
However, I do know that we all have to start somewhere.

Currently I am a computer specialist. Due to carpel tunnel
and other health problems I can not continue that profession
for much longer. I am also a chocolate hobbyist. I am hopeing
to turn my love for chocolate into a new career. I would like
to open a chocolate specialty store in the Southern California
area. I would be greatful for any advice or comments from fellow
chocolatiers.

Also, I have come to the conclusion that since I do not
have professional chocolate making experience I will need
someone who does. Can anyone tell me what kind of wages
would an experienced chocolatier expect, and where
can I find this type of person? I am sure this would be a
great opportunity for the right person because, I would
want this person to have free reign creatively.
Meaning, I am not afraid to try new products and ideas.
