Spent a half hour explaining to a cook why you can't just eliminate lemon juice from a recipe. He's got no baking experience, so doesn't understand how chemical leavenings work. I'm amazed that common home cookbooks don't contain this information. No one knows and it's so basic. Worst banana muffins I ever tasted in my life.... Completely inedible.
