I wouldn't touch it.
I get the same thing when people want to supply me with their own fruit for pastry.
I tell them I only sell finished product, if I can't get the fruit
I don't sell it.
You shoulda contracted to get your own lobster with their deposit covering the expense.
Now you've let them put a hand in your kitchen....and guess who's going to take the hit?
These are the same idiots who go to a gas station with 6 cans of
oil and want the mechanic to use it for an oil change.

There is no job you need so bad that you want to put yourself in this position.
You need to keep a professional distance.

Of course I've NEVER made these sort of mistakes. (duh!)

PS. if the lobster is absolute cat food just pass out the competitions biz cards.
