I guess I've been lucky, as I've never had a truly bad boss, bosses that are not to bright, yes
but bad no! I thought I had all the answers myself, so I decided to buy my own place, and proceeded
to spend the worst ten years of my life there, but gaining a far better understanding of why
"owners" or bosses can be a pain in the Chefs' butt! I have tried other lines of work, from
shifting to the front of the house, only to realize there was just as much crap out there! Then
I went to work for a friend in construction, but spent more time holding on to the roof or ladder
than pounding nails, and damn it was cold in the winter. Then I tried plumbing and electical
with my brother but after climbing into a septic tank for the second time I decided I wanted
to work at the other end of the food chain again! I am very fortunate to have found the ideal
Chefs position with a small company, doing numbers that previously I would have laughed at as
too small and unfullfilling. But I have a life now, no nights, and no weekends at work. Its warm
all winter, the owners respect me to a fair degree and I enjoy the work. I do not blame you
for wanting to get out of the business.... we all think about it. But trust me... you will miss it!
