TV, cookbooks, and the L.A. Times Food section are my
only sources of reference to find out who the great
chefs are. Since I'm not in the food biz, (but I plan
to be soon), I would like to know what books from what
chefs are a "must have" in a chef's library. Of all
these chefs on FoodTV and on PBS, which of them have
the respect of their peers in the industry?(Folks such
as Emeril, Pepin, Julia Child, etc). Also, what chefs
in the greater L.A. area should I be trying to work
for? The reason I ask is because I assume there is a
standard by which all chefs operate and there has to be
someone that embodies these standards and take them to
greater heights. I would appreciate any response.
