Like a chimney, when I was in Paris last I watched and amused how there was poodles trotting around the dining room of a great little restaurant and thru the kitchen window you could see the chef, cig hanging off his lip.
The food was fabulous.
I think a lot of taste is in the culture where you grow up and a lot is in the training.
Theres no shortage of chefs who don't smoke with no sense of balance let alone taste.
I personally have lousy taste but at least I know it.
I don't use my personal taste when working, I prepare it to a standard.
