A customer/friend gave me an autographed copy of Escoffier's _Livre de Menus_ for Christmas a few years ago (in the original French, of course). I don't use it for reference, I just take it out and touch it once in a while. I have Professional Baking by Gisslen but don't use it that often because the *huge* quantities aren't practical for a 24 seat restaurant.
