It sounds like a shaking out period, give them time to show what they can do and if you're as good as you say the business will come back.
The clients would be stupid if they didn't give the newbies a shot.
It would be better for you if you had a bread/butter regular earner, catering is definately a tougher game, been there more than a couple of times.
Look on the bright side, when they come back you can raise the price.
