you are right on target Gerald (this time) It IS a shaking out
period....i think the clients ARE stupid for giving newbies a shot
without being real cautious.... If they would interview them and ask
good questions, then talk to some real caterers, they would see the
difference up front.... I was not looking for support here, i was looking
for advice on how to address this proactively... thanks for both...
oh, i do have a bread/butter regular earner, i also own a family
steak house, which i dont cater from...... nor do i mix the two...
ppl dont want a family steak house to cater their first daughter's
first wedding :)
