Well, of course, but the other company is not very professional -- I would *never* do that to someone - especially with less than a week's notice!!

Decided not to do it - it was the other caterer's idea -- with no staff I have no control over how long/when they are going to serve it.

I have a friend who is a major player in catering in town - I do some pastries for her - she bills after the fact for parties. My guess is some people take eons to pay her. Not me! For this particular job I got a credit card number. I'll bring them the receipt to sign when I make the first delivery.
