Its not your job originally and you shouldn't feel bound by their previous agreements.
The other caterer dropped them, your position should be that of doing them a favor by picking it up.

Crab dip?, put it out early( on ice) and just enough to last an hour or so.

I was approached recently to cater some functions at Boston Billiard club, they were willing to pay good prices but heres the catch..

They pay 21 days net.!
After printing up menus for them I realised it would be crazy.
So I offered them a 40% discount , COD and I'll deliver and set up.
They said thats not our policy. It makes me wonder who their previous caterer was and how much they might be owed.
