: Hi, Gerard. Been along time. I totally agree. The real education starts the day I graduate. My class is full of prima-donnas who don't think that way. They are going to be so dissappointed when they graduate to 5-6 dollars an hour. This web site is full of people who want to change their current career and go into culinary arts, but how many culinary arts graduates give up because of the pay and go into another line of work? Lorri

OOps, I forget to check back for replies, been busy with Thank (goditsover) Giving.
A class full of primadonnas eh? heheh, I think quite a few fizzle out when they find its workworkwork,. Some of the best people come from other fields and find great satisfaction in food, some make quite a success of it too, too many pros get stuck in old methods..booring food and stale ideas.

Regards.
