: heres the question you ask yourself, what professional skills do I have?, school won't give you any but it will give you things that will come in handy as you begin to train, assuming that you take a professional position.

Hi, Gerard. Been along time. I totally agree. The real education starts the day I graduate. My class is full of prima-donnas who don't think that way. They are going to be so dissappointed when they graduate to 5-6 dollars an hour. This web site is full of people who want to change their current career and go into culinary arts, but how many culinary arts graduates give up because of the pay and go into another line of work? Lorri
