: A class full of primadonnas eh? heheh, I think quite a few fizzle out when they find its workworkwork,. Some of the best people come from other fields and find great satisfaction in food, some make quite a success of it too, too many pros get stuck in old methods..booring food and stale ideas.

fizzle out , I'll say . when i started my apprenticeship there was 32 students in my class. know 2 years later there is 5 and these will grad. this year with me. three of them are still looking for
"THAT JOB " they will never find because they have moved around so much they never stuck it out at any job when the heat got to hot in the kitchen ,the fourth one now owns his own restaurant and expanding, me i'm now a sous chef at a resort hotel
and get my next promotion after i graduate. I work for a great hotel firm that thinks schooling i s where it is at .I have been apprentice of the year twice at my school.If I had to do it over I would go through an apprenticeship Program agian. I have watch culinary school grads come and go. They think because they have a piece of paper they have a right to a high paying position in a kitchen without the experince to go along with it.
